New Orleans Unveils 'The Next Course': Carnival Cruise Line's Culinary Revolution

Carnival Cruise Line is making waves with its comprehensive culinary transformation called “The Next Course.” Launched in 2026 across its existing fleet and expected to debut on future ships in 2027 and 2028, this initiative is pivotal in reshaping the dining experience for the modern traveler. By overhauling their food and beverage offerings, Carnival aims to enhance the lives of over 6 million guests annually. The project is informed by data drawn from serving more than 100 million meals each year, indicating a significant shift away from traditional dining schedules toward a more flexible and engaging culinary landscape at sea.

The Shift in Dining Preferences: New Meal Schedules and Zero-Alcohol Trends

While some cruise companies are focusing on high-end exclusive specialty restaurants, Carnival is leveraging customer insights to cater to how today’s travelers want to experience their vacations. Post-pandemic trends reveal that many vacationers prefer earlier dining times and are shifting away from heavy alcohol consumption.

In response to these changes, Carnival’s culinary team acknowledges the evolving dining preferences of its guests. Today’s passengers are seeking “experiential dining” experiences that offer aesthetically pleasing dishes paired with quick and efficient service. To accommodate the increasing demand for earlier dining, many of Carnival’s main dining rooms are now open as early as 5:00 PM, making it easier for guests to get the most out of their onboard experiences.

At the same time, the cruise line is adapting to the growing popularity of non-alcoholic beverages. While alcohol sales have seen a steady rise of 3%, sales of zero-proof drinks have surged by an impressive 15%. More travelers are now looking for sophisticated drink options that provide a celebratory atmosphere without the drawbacks of alcohol. This shift is core to Carnival’s revamped beverage strategy.

Exciting New Dining Concepts for Cruise Enthusiasts

At an exhilarating showcase in New Orleans helmed by renowned chef Emeril Lagasse, Carnival unveiled four innovative dining concepts as part of “The Next Course.” These venues merge global culinary influence with accessible pricing, appealing to a wide range of guests:

  • Emeril’s Coastal Seafood: Bringing a taste of the coast with a Creole twist, this premium venue, headed by Lagasse, offers elevated dishes like signature New Orleans barbecue shrimp, fresh oysters, and whole roasted fish. Guests can indulge in this exceptional experience for a cover charge of $50 per person.
  • Uku Lei Lei: Infusing Hawaiian flair blended with bold Asian flavors, this vibrant venue serves refreshing poke bowls and succulent Mongolian beef short ribs. Best of all, guests can enjoy their first visit as part of their cruise fare, while subsequent visits cost only $8.
  • Fetaccine: A Mediterranean fusion destination, Fetaccine combines classic Italian dishes with delightful Greek influences, offering options like chicken parmesan and Greek lamb chops. Similar to Uku Lei Lei, the first visit is complimentary, followed by an $8 cover charge for returning guests.
  • Le Bistro Musicale: Exclusive to the upcoming Carnival Festivale, this Paris-themed café features elevated French cuisine paired with live music. Guests can savor delights such as steak frites and chicken cordon bleu while enjoying the multidimensional ambiance.

Redefining Nightlife Onboard: Innovative Bars and Personalized Mixology

To meet the soaring demand for zero-proof beverages, Carnival Festivale will introduce three fresh beverage venues designed to create lively social environments:

The Spark

As a thrilling entertainment lounge, The Spark features live music alongside a creative selection of cocktails and mocktails influenced by timeless songs, making every drink experience memorable.

Mix

Mix is an interactive bar where guests can personalize their drinks, combining an assortment of unique flavors and bases, whether spirit or zero-proof, to create their perfect beverage.

Festival Grounds Coffee & Bar

This versatile venue transitions beautifully from a daytime coffee bar serving premium brews to an energetic cocktail lounge in the evening, catering to all entertaining needs.

A Fleetwide Update: Enhancements That Elevate Your Experience

Though the signature restaurants are set to launch on Carnival Festivale in 2027 and Carnival Tropicale in 2028, Carnival is already rolling out various elements of “The Next Course” across its existing fleet of 29 ships in 2026. This initiative ensures guests sailing in 2026 are among the first to enjoy these revamped offerings.

The Main Dining Room now boasts reimagined breakfast, brunch, and dinner menus, alongside an Express Dining option designed for swift, flexible service. Meanwhile, the Lido Marketplace is introducing a new menu aimed at families featuring daily favorites that children will love. To keep casual dining exciting, the popular BlueIguana Cantina will also roll out rotating daily specials.

Additional fleetwide enhancements include Bagels @ Sea, offering freshly baked bagels with a range of toppings, and a redefined Chef’s Table tasting menu that incorporates regional flavors into multi-course dinners. To enhance convenience, Carnival is expanding mobile app ordering at all onboard coffee outlets, allowing guests to order ahead and skip the lines.

If you’re planning a cruise adventure, it’s essential to know that your onboard experience will be remarkably different from previous years. With flexible dining times and premium beverage options, you won’t have to settle for traditional routines.
