Unveiling Caravela: A Culinary Journey at NH Collection Reethi Resort

Set within the idyllic UNESCO World Heritage-listed Baa Atoll, the NH Collection Maldives Reethi Resort has introduced an exciting new dining experience named Caravela. This boutique culinary concept takes guests on a vibrant journey across oceans, cultures, and flagship flavors, redefining the traditional dining experience as a narrative of exploration. Guests will find themselves engaged not only in a meal but in an immersive story deeply rooted in the rich history of maritime discovery and the evolution of global cuisine.

Inspired by the age of exploration, Caravela artfully combines Spanish cooking techniques with the freshest ingredients sourced directly from the stunning Maldivian waters. Each dish is designed to reflect a significant chapter in the overall journey of culinary history, celebrating the intricate pathways navigated by explorers and the rich tapestry of spices and food traditions exchanged through cultures and continents. This unique perspective integrates deep respect for historical roots while providing contemporary interpretations that highlight local flavors.

The name “Caravela” is derived from the caravel, a pioneering Portuguese ship that greatly enhanced navigational capabilities between the 14th and 17th centuries. This link to the past invites diners to savor their meals against a backdrop of adventure and cultural exchange, brilliantly mirrored through the restaurant’s meticulously crafted dishes. Each element, from the carefully curated menu to the elegant setting, is specifically designed to evoke a sense of romantic oceanic travel.

Caravela is an exclusive dining affair offering an intimate atmosphere as it welcomes just 12 guests at a time, gathered around a singular communal table. This unique format encourages open conversation and meaningful connections among diners, enhancing the experience of shared culinary storytelling. The ambient design elegantly weaves together serene island beauty and understated sophistication, ensuring a tranquil yet inspiring dining environment.

The inaugural menu, titled The Atlantic Voyage of 1487, retraces the famous voyages of explorers who sailed from Iberia along the African coastline to the Cape of Storms, searching for a maritime route to India. This five-course culinary adventure immerses guests in the rich flavors that reflect both geography and historical significance.

The journey commences with the First Light of the Atlantic, featuring delightful King Crab fritters paired with ikura and a vibrant lime-yuzu vinaigrette that provides a refreshing introduction to the ocean’s bounty. The second course, entitled Winds of the Cantabrian Sea, highlights torched Maldivian tuna loin, complemented by pickled escabeche and delicately spiced Moroccan elements, showcasing a harmonious blend of bold flavors.

Continuing this delectable voyage, the Crossing the Madeira Currents dish presents local job fish alongside confit plantain purée and a prawn coral tuile, exemplifying the successful fusion of island products with signature culinary practices. A green apple sorbet, reminiscent of the Wambugu apple from Western Africa, serves as a perfect palate cleanser prior to the main course.

The climax of the menu, Benguela Shores at Dusk, showcases a meticulously prepared 12-hour sous-vide pork belly that is complemented by a smoky chili glaze and a luscious Spanish chorizo jus—an illustration of warmth and depth, mirroring the influences woven throughout the history of maritime travel. To conclude this exquisite meal, guests are treated to the Triumphant Return to the Iberian Coast, a delicious olive oil cake served with port wine reduction and blood orange gel, intricately encased in a delicate sugar sphere paying homage to the historic Armillary Sphere, a symbol of exploration and discovery.

The culinary journey wraps up with a selection of petit fours, including caramelized torrija, coffee chocolate bonbon, and South African milk tart, each piece a teaser for upcoming menus linked to fresh explorations in culinary storytelling.

Looking ahead, Caravela is designed to keep evolving. Future menus such as The Pacific Voyage of 1492 and The Indian Ocean Voyage of 1498 promise innovative flavor maps and culinary interpretations influenced by historical maritime endeavors. Diners can look forward to fresh narratives and creative presentations with every new visit.

Resort Manager Melroy Fernandes, in collaboration with the resort’s expert culinary team, has brought Caravela to life by integrating historical inspirations into an unforgettable dining experience. With professional knowledge as a Master Sommelier, Fernandes has crafted a matching wine journey to elevate the experience with selected pairings designed to complement the flavors and textures of each dish, ensuring that Caravela transcends a mere meal into a fully immersive, captivating journey tailored for those seeking a profound culinary adventure.

In conjunction with NH Collection Maldives Reethi Resort’s commitment to memorable guest experiences, Caravela becomes a noteworthy addition to their diverse dining landscape. It complements offerings such as all-day dining at Jumla, signature experiences at Alifaan and Kaiyo, as well as beverage-focused venues including Atardecer, Handhuvaru, Madumaithiri, and Splash Bar. Moreover, the resort also introduces a unique Adrift destination dining concept, providing guests with distinct gastronomic excursions.

For those eager to indulge in this culinary odyssey, the Atlantic Voyage tasting menu—complete with thoughtfully curated wine pairings—is available at USD 190++ per person, ensuring a luxurious experience through advance reservations.
